Pallars Sobirà is a mountain region that has traditi onally lived from a subsistence economy. These two facts, mountain and self-sufficiency have conditi oned a traditional gastronomy. This has not been an impediment for this gastronomic wealth to be transferred from generation to generation to the present day. A good example and proof of this is the importance of cheese in this territory. Artisan cheese and consequently of limited production, although this has not been a problem to position them in the list of quality products of the agri-food market.
In this sense, years ago, practically all the houses had sheep and cheese was made in the month of June, before they went to the mountain. Nowadays, there are practically no herds. Despite of this, many agri-food artisans of the territory have begun to make sheep, goat and cow cheeses.

WHAT CAN I DO
The visit to some of the dairy farms of the territory will undoubtedly complete a tasting of this artisan and at the same time succulent product. The different producers open the doors of their artisan workshops, to show us how they produce this precious delicacy.
Practically all the cheesemakers elaborate a wide range of cheeses: cured, semicured, tender and spread. In some cases, other milk derived products are made, such as yougurts.
Also, to satisfy the most exquisite palates, the producers have begun to make cheese with different flavours: smoked, in oil, with aromatic herbs of the area .... The hard part is choosing which one to try.
The elaboration of these products is done practically by the traditional method and with raw and whole milk of animals fed with grass of meadows of high mountain. In some organized visits it is possible to visit these places where these animals eat quietly and in freedom. And in other cases, you can visit the farm where you will also get to know the entire milking process.
The products obtained in these cheese factories are of such excellent quality that in many cases can be found in many restaurants and gourmet shops.
